Just 11 days until Christmas and this is week 8 of my Keto journey, my blood sugar has normalized, I haven't had any really high spikes, the highest reading in the last 7 weeks was 5.6, so I am happy that this WOE is good for my diabetes, the weight issue is a little more complex for me anyway, Andrew is having some good loses, in the last 2 weeks I have been going up and down like a yo yo, might be where they came up with yo yo dieting ( der!). After 6 weeks I was 5.4 kilo down, yippee but in the last two weeks, like I said (like a yo yo) it is a little disheartening when you feel you haven't eaten much and the scales go up not down. I follow a few Keto groups on Facebook and they don't recommend that you weigh everyday for this reason the fluctuation puts you off, but I have always found that doing the daily weigh in on the Wii, helps me to stay focused on the end result. Here is a little motivational image that someone shared that made me put the weight loss and fat loss into perspective. I don't really see this as being a diet, because i am not depriving myself of food, I am not hungry, eating healthy fats keeps you fuller for longer, some people (so called nutritionists) say this WOE is not sustainable, I have to ask why? after 8 weeks I am not craving bread, or potatoes (I love potatoes) or rice, and was never a fan of pasta so if you don't crave it or miss it where is the harm? they say you can't cut out whole food groups, BUT we don't need Carbohydrates, our bodies can function perfectly without them.
Dietitians, and Nutritionists have a lot to answer for by telling people to go low fat, this is what is making people sick and unhealthy, our brain is about 70% fat and needs the good fats to function efficiently, and Proteins are also an essential food group, but Carbs simple or complex are just addictive calorie wasters. I was already sugar free, so any cooking, was always sugar free, but now I am cooking sugar free and carb free, in fact I make bread rolls that taste and (sort of look like) the real thing. The Bread Roll recipe I acquired from the Diet Doctor, here is a link to that recipe, www.dietdoctor.com/recipes/the-keto-bread I will have to update my recipes page on this blog to include some of the really good Keto friendly recipes that I have found and tried, I made a Keto version of a Monte Carlo biscuit, I make my own strawberry jam with nothing added and use this along with a cream cheese filling in a coconut biscuit, as my friend Judy would say "they are to die for"ha ha. The Keto groups that I follow are really good for hunting out the products that are Keto friendly, one member in particular even goes so far as posting the supermarkets specials for the week that are Keto friendly, the group is called Lazy Keto but I think it should be called Easy Keto, anyway I will be remaining on Keto as my diabetes approves, and I will be a lot happier when the scales start to descend a little more, which I am positive they will. I don't really see an issue of getting through Christmas doing Keto, My daughter Crystal is hosting Christmas again this year (she has the kiddies) I will make some Keto friendly desserts and just have more pork and crackling instead of the roast potatoes, gone are the days of eating for the sake of eating and King Henry the VIII feasts of eating everything that wasn't nailed down, we should all "eat to live " not " live to eat" but I know it is hard when food tastes so darn good.
