Ok so I am two days off 3 weeks on Keto, and for a week and a half my blood sugar has not been over 4.7, it actually hit 3.6 yesterday, some may say that is a little low but I felt fine, my weight loss to date is 4.9 kilo, I had a couple of small gains which I put down to my toilet habits, have been a little bit out of whack, don't want to hit you with (TMI) anyway that was all down to not enough fiber, but I found a fix for that and everything is good again.
So is it hard to give up carbs? well it sounds hard but it really isn't, I am not hungry at all, I am having two meals a day, the occasional snack but I practice IF (Intermittent Fasting ) which means I only eat in a 6 hour window so really there is no time to fit in another meal. I know that your taste buds change every two weeks so if you can go without one of your favourite foods for two weeks chances are you will not crave this food anymore, but the memory is strong, I still love chocolate, but I know I can live without it, I also love potato and every which way you can cook it, but I am strong, and my Bingo buddies help me stay that way by putting the temptation of a great big bowl of wedges on the table and offering them around, I politely refuse but inside I am thinking I could eat that whole bowl ha ha, but each week they are less tempting, so I feel I am winning the carb cravings. I have this last week discovered some new recipes that I found to be very good, the keto bread roll, for a change not made with a dozen eggs so doesn't have that eggy taste, it is made with a small amount of almond meal and Psyllium husk (which also boosts the fiber) they surprisingly tasted like a wholemeal bread roll, and only 2g carbs. So now this bread can be the base to so many meals. I have adapted one of my old favourite recipes the sugar free cheese cake I just make it without a base and put it in a bowl, I don't miss the base it is all about the cream cheese anyway. I have been compiling keto recipes in a folder so I will be able to have a variety of things to make, and I have been experimenting with coatings now that bread crumbs are out of the equation, bought a packet of pork crackles (no carbs no sugar) and ran them through the food processor with half a cup of Psyllium husk, then just dipped chicken in egg and my mix and cooked as usual, I think they turned out good. I actually think that this way of eating is sustainable, I still miss my juices a bit, nothing gives you that feeling of your body soaking up all the nutrients like a green juice does, but for now I have to think of the carb count in a juice , at least with doing the keto diet you can go out for tea order a steak and salad no chips no sauce or dressings and still appear to fit in with everyone else, no turning down invitations because your on a juice fast and don't want to break it. Well that is about it for now, you will be happy to know that the body odour phase has passed, must have been my body expelling all the bad toxins, still have bouts of energy (nothing wrong with that) but I am still not sleeping maybe I can take a supplement. Something for me to report on next time. Keep on Ketoing !
